Beat the summer heat and please your taste buds with a mint-Oreo icebox cake
Have a sweet tooth? Me, too! I love cold desserts during the summer. They’re so refreshing after a long, hot day in the sun. I avoid using my oven because it creates extra heat, and I like to keep my home nice and cool. Give your oven a break. It will save energy and fortunately, there are some pretty great no-bake desserts out there that’ll really hit the spot.
I’m loving icebox cakes right now because there are so many options and they’re easy to make ahead and take to summer picnics and event. It also doesn’t hurt that they look amazing. Icebox cakes are quick and easy to make, and the whole family will enjoy it. Icebox cakes are perfect for little helpers (and keep little hands busy) in the kitchen. You’ll just have to “share” the responsibility of licking the bowl and spoon.
As soon as I saw that this no-bake Mint Oreo Icebox Cake recipe on the blog “Life Love and Sugar” included Oreos dipped in milk, one of my favorite snacks, I knew I had stumbled on a heavenly dessert. It’s just the right amount of minty flavor, too. You can experiment with this recipe by using different flavors of pudding and Oreos. Next time, I want to try it with chocolate Oreos for a chocolate overdose – my favorite!
What you’ll need:
1 3.4 oz package chocolate pudding
1 3.4 oz package vanilla pudding
4 1/2 cups milk
3/4 tsp mint extract
4 drops blue food color
2 drops yellow food color
2 15.25 oz boxes mint Oreos
1 1/2 cups mini chocolate chips
8 oz Cool Whip (or homemade whipped cream)
Chocolate sauce for topping, if desired.
Step 1:
Prepare the pudding and place it in the fridge to cool. The original recipe calls for one vanilla pudding with mint flavoring, but I decided to use chocolate pudding instead because I am a chocoholic.
Step 2:
While the pudding is cooling, dip Oreos in milk and place them in a single layer on the bottom of a 9×13 pan. I could not fit a full Oreo in the last row, so I broke the Oreo in half and lined the edge.
Step 3:
Spread the pudding over the Oreos. Sprinkle ¾ cup chocolate chips on top of the pudding.
Step 4:
Dip the remaining Oreos in the milk and make another layer on top of the chocolate chips.
Step 5:
Add another layer of pudding.
Step 6:
Spread Cool Whip over the pudding and sprinkle ¾ cup chocolate chips on top. I did not add crumbled Oreos or chocolate sauce on top, but feel free to add some! You can store in the refrigerator for a gooey creation or in the freezer for a solid cake. I left mine in the refrigerator for about two hours before cutting myself a slice, but it was easier to cut a piece when it was left in the freezer for an hour. It’s really up to you to decide how you want to store it! It will taste amazing either way.
